Almond Cheese Tarts
|Pastry/Made from a mix / homemade raspberry jam||1|
|Creamed cottage cheese||1 Cup (16 tbs), sieved|
|Sugar||1⁄4 Cup (4 tbs)|
|Ground almonds||3 Ounce|
|Soft butter/Margarine||2 Tablespoon|
|Grated lemon rind||1⁄4 Teaspoon|
Roll out pastry and cut in small rounds to line 2 dozen tiny tart tins about 1 1/2-inch bottom diameter.
Add a dab of raspberry jam to each.
Mix remaining ingredients together and spoon-spread over the jam.
Bake at 375F for 15 minutes.
