Grapefruit Tarts

  Unflavored gelatin 1 1⁄2 Teaspoon
  Cold water 2 Tablespoon
  Neufchatel cheese 8 Ounce, softened (1/2 Package)
  Sifted powdered sugar 1⁄4 Cup (4 tbs)
  Unsweetened grapefruit juice 3⁄4 Cup (12 tbs)
  Vanilla extract 1 Drop
  Tart shells 5
  Pink grapefruit 1 Small, peeled (Sectioned)
  Grapefruit glaze 1⁄2 Cup (8 tbs)
  Mint leaves 4

Sprinkle gelatin over cold water in a small saucepan, let stand 1 minute.
Cook over low heat, stirring constantly, until gelatin dissolves.
Set aside.
Combine Neufchatel cheese, sugar, juice, and vanilla in container of an electric blender; top with cover, and process until smooth.
Add gelatin mixture, and process 5 seconds.
Chill slightly.
Spoon cheese mixture evenly into Tart Shells.
Top each with grapefruit sections.
Drizzle glaze evenly over grapefruit.
Chill Thoroughly before serving.
Garnish with mint leaves, if desired.
