How To Make A Raspberry Chocolate Mousse Tart

This chocolate lovers' tart, perfect for Valentine's Day, is light, creamy, crunchy, tangy, bittersweet and subtle- you name it. It's got all those wonderful flavors going on in one. Not to mention- it is super easy to make and definitely a crowd pleaser!

Ingredients

Chocolate cookies 1 1/2 Cup (24 tbs) (such as Oreos)
Butter 1/4 Cup (4 tbs) , melted
Raspberries 1 Cup (16 tbs) (frozen, fresh
Dark chocolate 4 Ounce , chopped/ broken up (100g)
Whole raspberries 1/4 Cup (4 tbs) (for garnishing)
Chocolate curls 1/4 Cup (4 tbs) (for garnishing)

Directions

MAKING:

In a food processor, combine cookies, butter and process until the mixture resembles wet sand.

Press the mixture into pie pan and refrigerate the mixture for the crust to set.

In a food processor, blitz raspberries until smooth.

Pour into saucepan and bring to boil.

In a bowl, place chocolate and pour hot raspberry mixture (straining is optional). Stir well until chocolate melts.

Add cream and whip well. Spread on top of cookie crust and chill until serving.

Garnish with chocolate curls and raspberries.
