Mahi Mahi Tacos

Ingredients
For guacamole
  Avocado 3 1⁄2 , peeled and diced
  Fresh lime juice 1 Ounce
  Kosher salt 1 Pinch
  Black pepper To Taste
  Garlic 1 1⁄2 Tablespoon, finely minced
  Cilantro 2 Tablespoon, finely sliced
For salsa
  Olive oil 1 Tablespoon
  Onion 1⁄2 Cup (8 tbs), finely minced
  Serrano pepper 8 Ounce, chopped
  Jalapeno 8 Ounce, chopped
  Canned tomatoes 30 Ounce
  Cherry tomatoes 30 Ounce
  Guajillo chiles 50 Gram, teared (6 chilies)
  Kosher salt To Taste
  Pepper To Taste, freshly grounded
For crema
  Sour cream 14 Ounce
  Lime juice 3 Ounce
  Pepper To Taste
  Scallion 2 Ounce, finely chopped
  Cilantro 2 Ounce, finely chopped
  Honey 3 Tablespoon
For mahi mahi
  Mahi mahi 4 Pound, sliced into 5 inches strip
  Olive oil 1⁄4 Cup (4 tbs)
  Corn tortilla 1 Pound
Directions

MAKING
1. For making Guacamole – in a bowl take all the ingredients and smash with spoon. Set aside.
2. For Salsa – in a pan pour in the olive oil, add in onion sauté for few minutes.
3. Add in the garlic and cook for 1 minute.
4. Add in Serrano and jalapeno pepper. Stir with spoon, let it sweat for few minutes.
5. Stir in canned tomatoes, cherry tomatoes and guajillo chiles. Cook for 5 minutes.
6. Season with salt and pepper. Simmer for 20 minutes.
7. Cool the salsa and pour in the food processing jar to make puree. Season with salt and pepper if desire.
8. Take out the salsa in a large bowl and set aside.
9. For Crema – in a large bowl add in the sour cream and lime juice. Stir well with spoon.
10. Season with kosher salt and pepper. Add in the scallion and cilantro, mix well.
11. Add in the honey and mix again. Keep the crema aside.
12. For making mahi mahi – in a pan heat the olive oil on medium – high flame.
13. Place the fish in the pan and sear for 3 minutes on each side. Do the same with rest of the fish.

FINALIZING
14. Place the tortillas over the chopping board. Top with guacamole, followed by mahi – mahi, salsa and finally by crema.

SERVING
15. Garnish Mahi Mahi Taco with onion and cilantro. Serve and enjoy!
