|Lean ground beef||1 Pound|
|Onion||1 Medium, chopped to make 1/2 cup|
|Chopped sweet green pepper||1⁄4 Cup (4 tbs)|
|Tomato sauce||8 Ounce (1 can)|
|Canned chopped mild green chilies||2 Tablespoon (add more as per taste)|
|Shredded sharp cheddar cheese||2 Ounce (1/2 cup)|
|Dairy sour cream||1⁄2 Cup (8 tbs)|
|Diced tomatoes||4 Tablespoon|
|Shredded lettuce||4 Tablespoon|
1. Microwave the beef, onion and green pepper in a 2-quart microwave-safe casserole on Full Power for 7 to 9 minutes, breaking up and stirring every 2 minutes, until the meat is no longer pink and the vegetables are tender. Drain off the fat.
2. Stir in the tomato sauce, chilies and salt, blending well.
3. Just before serving, slash the tops of the potatoes and divide the Cheddar cheese and the sour cream evenly into the centers. Cover with the hot meat sauce. Garnish with the diced tomatoes and shredded lettuce.
