Garden Taco Rice
|Ground beef/Ground turkey||1 Pound|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Taco seasoning mix||1 1⁄4 Ounce (1 Package)|
|Water||1 1⁄2 Cup (24 tbs)|
|Thinly sliced zucchini||1 1⁄2 Cup (24 tbs)|
|Frozen corn||1 Cup (16 tbs) (From 16 Ounce Package)|
|Canned stewed tomatoes||14 1⁄2 Ounce (1 Can)|
|Uncooked instant rice||1 1⁄2 Cup (24 tbs)|
|Shredded cheddar cheese||4 Ounce (1 Cup)|
In large skillet, brown ground beef and onion; drain.
Stir in remaining ingredients except rice and cheese; bring to a boil.
Stir in rice.
Reduce heat to low; cover and simmer 5 to 7 minutes or until liquid is absorbed, stirring occasionally.
Remove from heat.
Fluff mixture with fork; sprinkle with cheese.
Cover; let stand 3 minutes or until cheese is melted.
Garnish with cilantro and cherry tomatoes, if desired.
