Taco Rice Skillet
|Ground beef||1 Pound|
|Onion||1 Medium, chopped|
|Canned tomatoes||16 Ounce (1 Can)|
|Rice||1 Cup (16 tbs)|
|Taco seasoning mix||1 Packet (1 Package)|
|Shredded cheddar cheese||1 Cup (16 tbs)|
|Shredded lettuce||2 Cup (32 tbs)|
Brown beef with onion; drain off fat.
Drain and cut up tomatoes, reserving juice.
Add water to juice to make 2 1/2 cups liquid.
Add tomatoes, liquids, rice and taco seasoning to beef in skillet.
Bring to boil.
Reduce heat; cover and simmer until liquid is absorbed, about 25 minutes.
Top with shredded cheese and lettuce before serving.
