Malt Syrup

Malt syrup is a natural sweetener that is prepared from ground corn and sprouted barley. It is a natural and a healthy substitute for other syrupy and artificial sweeteners. Usually found in health stores, it is known to be at least 80% as sweet as honey. Malt syrup has a thick and sticky texture and it is brown in color. Made by malting barley grains, it consists of approximately 65% maltose, 30% carbohydrate and about 3% protein. Malt syrup recipes are frequently used where cooking and baking is extensively required and it is used even in the production of beer. To create a perfect malt syrup recipe, the barley grains need to sprout or germinate and then this dried usually in a kiln or a quick drying oven. Then the sprouts are cooked to form sweet and dark syrup popularly known as malt syrup. The malt syrup can finally be strained to eradicate impurities and it is then bottled or canned.
