Basic Nut Syrup
|Sugar||2 Cup (32 tbs)|
|Water||1 Cup (16 tbs)|
|Dark corn syrup||1⁄4 Cup (4 tbs)|
|Coarsely chopped walnuts/Pecans, toasted almonds, hazelnuts, or blanched, roasted, unsalted peanuts||1 Cup (16 tbs)|
Mix sugar, water, and syrup in a 1-quart heavy saucepan, set over moderately low heat, and heat and stir until sugar dissolves.
Raise heat and boil gently, uncovered, without stirring 3 minutes; stir once and, if the consistency of maple syrup, remove from heat; if not, boil 1 minute longer.
Cool slightly and add vanilla and nuts.
Stir just to mix and serve warm or cool over ice cream.
