Court Bouillon For Fish

Ingredients
  Water 8 Cup (128 tbs)
  Carrot 1 , sliced
  Onion/2 leeks 1 , sliced
  Celery stalks 2 , sliced
  Lemon 1 , sliced
  Salt 2 Teaspoon
  Pepper/6 whole peppercorns 1⁄4 Teaspoon
  Cloves 4
  Bay leaf 1
Directions

1. Put the water, carrot, onion, celery and sliced lemon into a large agate or enamel kettle. Bring the liquid to boiling.
2. Add the salt, pepper, cloves and bay leaf. Boil 2 or 3 minutes.
Use to poach fish. This amount of water will poach a 2- to 3-pound fish.
