Pear Fans With Orange Syrup
|Orange juice||1⁄2 Cup (8 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Tablespoon|
|Finely shredded orange/Lemon peel||1 Teaspoon, finely shredded|
|Bartlett/Other pears||3 Medium|
|Shredded orange peel/Lemon peel||1 Tablespoon|
In a 1- to 2-quart pan, combine sugar, orange juice, butter, and 1 tablespoon of the lemon juice; cook over high heat, stirring, until butter is melted and sugar is dissolved.
Stir in the 1 teaspoon orange peel, then divide orange syrup equally among 6 dessert plates.
Cut pears in half lengthwise.
Remove core and blossom end from each half.
Cut each pear half lengthwise into 1/4-inch-thick slices, leaving stem end intact.
Drizzle pear halves with remaining 1 tablespoon lemon juice.
Place a pear half, cut side down, atop syrup on each plate.
With flat of a knife, gently press down on each pear to fan out slices.
Garnish with orange peel, if desired.
