Simple syrup not so much a recipe as it is a method. You need equal parts 1:1 of sugar and water most recipes call for boiling the sugar and water together until the sugar is dissolved. Totally unnecessary. In fact when you boil them together you run the risk of overboiling and reducing the liquid too much - which can give you an oversweet result. So just pour hot boiling water from a kettle and stir. Easy. Easy. Easy.

Making
Place the sugar in a heat proof 2 cup measure (or heat proof glass bowl). Pour over water directly from a boiling kettle. Stir until clear.
Once you've done it a few times - you won't even measure the water before you pour. Just pour directly over the sugar (in a 2 cup measure) and stir. When the mixture reaches 1½ cups - you've added enough water.
