Cranberry Syrup

Ingredients
  Cranberries 3 Cup (48 tbs)
  Whole cloves 3
  Water 2 Cup (32 tbs)
  Orange peel strips 2
  Sugar 1 1⁄2 Cup (24 tbs)
  Cinnamon stick 1 , cracked
  Salt 1 Pinch
Directions

In a stainless steel or enameled saucepan combine the cranberries with the water, bring to a simmer and cook over moderate heat, stirring occasionally, until the berries begin to pop.
Force the mixture through a food mill or sieve into a large stainless steel or enameled saucepan, add the sugar, cinnamon, cloves, orange peel, and a pinch of salt and gently boil, skimming, for 15 minutes.
Strain through a fine sieve into sterilized jars and seal.
