Broiled Sweetbread Recipes
Cover sweetbreads with water to which vinegar and salt have been added. Simmer 20 minutes drain. Remove membranes slice sweetbreads. Arrange on rack in broiler pan. Brush with bouillon prepared by dissolving broth mix in water and sprinkle with parsley. Broil

Soak sweetbreads in salted water 1 hour drain. Put in saucepan cover with water. Bring to boil reduce heat. Simmer 30 minutes remove sweetbreads. Discard fat and connective tissues split lengthwise. Sprinkle with salt and pepper. Broil 10 minutes in hot 450 F
Quick Broiled Sweetbreads
Simmer sweetbreads in salted water and vinegar tor 20 minutes drain and plunge into cold water . Remove membrane on the outside. Brush with butter or margarine and broil slowly until brown on one side turn and brown other side. Season to taste.
Skin and trim sweetbreads prepared as above dividing each pair. Dip sweetbreads and pineapple rings in melted fat and broil or saute in a frying pan until golden brown. Arrange a sweetbread on each pineapple ring and serve with a Mushroom Sauce.
Broiled Sweetbreads And Pineapple
Split sweetbreads crosswise. Brush with oil. Sprinkle with salt and rosemary. Broil for 5 minutes.
Prepare sweetbreads as above cut into thin slices sprinkle with salt and pepper dot with butter and broil under moderate heat about 10 minutes.
