Braised Sweetbreads A La Parloa

Ingredients
  Sweetbreads 6 (3 Pairs)
  Carrot 1 Teaspoon, minced
  Onion 2 Teaspoon, minced
  Fat 2 Tablespoon
  Flour 1 Tablespoon
  Water 1 Cup (16 tbs)
  Beef extract 1 Teaspoon
  Bay leaf 1
  Parsley sprigs 1
  Lemon juice 1 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1.Start by preheating the oven to 350F degrees
MAKING
2.Now prepare sweetbreads according to directions
3.In a deep baking dish, arrange the sweetbreads
4.In a pan, cook vegetables in fat for 15 minutes
5.Now add flour and stir until the mixture becomes frothy
6.Also add the water gradually, stirring all the time
7.When this liquid boils, stir in the meat extract and seasonings
8.Cook for 5 minutes and strain over the sweetbreads
9.Cover the pan and cook in a moderate oven for 1 hour,
10.Make sure to keep basting every 15 minutes with the gravy in the pan
11.On pieces of toast on a warm dish, arrange the sweetbreads and pour mushroom sauce around them
SERVING
12.Serve with salads
