|Sweetbreads||1 1⁄2 Pound|
|Butter||1⁄4 Cup (4 tbs)|
|Lemon juice||2 Teaspoon|
|Parsley||2 Teaspoon, chopped|
Prepare and slice sweetbreads as for Creamed Sweetbreads.
Melt butter in a frying pan and when sizzling, place sliced sweetbreads in pan and fry until browned on all sides.
Place on a warm serving dish and season lightly with salt and pepper.
To frying pan add the lemon juice and chopped parsley.
Mix to blend in juices, taste and adjust flavor and pour over sweetbreads.
