Sweetbreads En Casserole

Ingredients
  Sweetbreads 3 Pound
  Onion 1 Large
  Shortening 1 Tablespoon
  Paprika To Taste
  Parsley flakes 10 Gram
  Bouillon 1 Cup (16 tbs)
  Calf liver 1 Pound
  Cornstarch 2 Tablespoon
  Mushrooms 1 Pound
  Patty shells 8
  Salt To Taste
  Pepper To Taste
Directions

Plunge sweetbreads in boiling water; let stand for several minutes.
Remove outer skin.
Saute onion in shortening in skillet until tender; add salt and pepper, paprika and parsley flakes.
Stir in bouillon.
Add sweetbreads and liver; cook gradually for 30 minutes or until tender.
Blend cornstarch with small amount of cold water; add to sweetbread mixture, stirring constantly, until thickened.
Add mushrooms.
Cook for 10 minutes longer; pour over warmed patty shells.
Garnish with small pimentos.
