Creamed Sweetbreads

Ingredients
  Cooked sweetbreads 4 (2 pairs)
  Butter/Margarine 4 Tablespoon
  Flour 4 Tablespoon
  Milk 2 Cup (32 tbs)
  Salt 1 Teaspoon
  Powdered mace 1⁄8 Teaspoon
  Egg yolk 1 , well beaten
Directions

1. Cut the sweetbreads in small pieces.
2. Melt the butter or margarine, blend in the flour add milk slowly, stir and heat 5 minutes.
3. Add the salt and mace, then the chopped sweetbreads.
4. Remove from the heat, add the egg yolk, mix well, return to the heat and stir and cook 1 minute.
