|Cooked sweetbreads||4 (2 pairs)|
|Milk||2 Cup (32 tbs)|
|Powdered mace||1⁄8 Teaspoon|
|Egg yolk||1 , well beaten|
1. Cut the sweetbreads in small pieces.
2. Melt the butter or margarine, blend in the flour add milk slowly, stir and heat 5 minutes.
3. Add the salt and mace, then the chopped sweetbreads.
4. Remove from the heat, add the egg yolk, mix well, return to the heat and stir and cook 1 minute.
