1. Prepare sweetbreads according to directions. Keep them whole during this process.
2. Start broiler, set at Moderate, 350° F. Rub a shallow pan with butter or margarine.
3. To broil them, split the sweetbreads length wise. Place in the pan, and brush them liberally with the melted butter or margarine. Sprinkle with salt and pepper. Place under the broiler and broil until the top is bubbling and golden brown, about 5 to 8 minutes.
4. Remove the pan, turn the sweetbreads carefully with a spatula or pancake turner. Brush with more butter or margarine and broil 3 to
5 minutes on the second side. Sprinkle with lemon juice.
