Sweetbreads in Paper Cases
|Veal sweetbreads||1 Pound, soaked, parboiled, membrane removed, pressed under weights and sliced|
|Madeira||1⁄2 Cup (8 tbs)|
|Chicken stock||1⁄2 Cup (8 tbs)|
|Spinach leaves||18 , stems removed|
|Ham slices||6 , baked or boiled|
Sprinkle the sweetbread slices with salt and pepper.
Melt 4 tablespoons [60 ml.] of the butter in a saute pan over medi-minutes, turning the skewers frequently so that all four sides are equally cooked.
Transfer the skewered meat to a hot dish and dot with mattre d'hotel butter.
Garnish the dish with the slices of lemon.
