Sweetbreads In Paper Cases

Ingredients
  Veal sweetbreads 1 Pound, soaked, parboiled, membrane removed, pressed under weights and sliced
  Butter 6 Tablespoon
  Madeira 1⁄2 Cup (8 tbs)
  Chicken stock 1⁄2 Cup (8 tbs)
  Spinach leaves 18 , stems removed
  Ham slices 6 , baked or boiled
  Salt To Taste
  Pepper To Taste
Directions

Sprinkle the sweetbread slices with salt and pepper.
Melt 4 tablespoons [60 ml.] of the butter in a saute pan over medi-minutes, turning the skewers frequently so that all four sides are equally cooked.
Transfer the skewered meat to a hot dish and dot with mattre d'hotel butter.
Garnish the dish with the slices of lemon.
