Strawberry-Apricot Caramel Sundaes

For the kids who love strawberries, these Strawberry-Apricot Caramel Sundaes will do the trick. I prefer serving this Strawberry-Apricot Caramel Sundaes with sugar cookies. Check out the recipe of the rich tasting Strawberry-Apricot Caramel Sundaes.
  Chopped apricots 6 Ounce (1 Cup)
  Sliced strawberries 1 Cup (16 tbs)
  Orange juice 2 Tablespoon
  Low fat vanilla ice cream 2 Cup (32 tbs)
  Fat free butterscotch flavored sundae syrup 1⁄4 Cup (4 tbs)
  Chopped pistachios 4 Teaspoon

Combine first 3 ingredients in a bowl; stir well.
Cover and chill 30 minutes.
Spoon ice cream into stemmed glasses; top with fruit mixture and syrup.
Sprinkle with pistachios.
Serve with sugar cookies, if desired.
