Mint Julep Sundaes
|Unsweetened crushed pineapple||8 Ounce, drained|
|Lemon juice||2 Teaspoon|
|Cr�me de menthe||2 Tablespoon|
|Vanilla ice milk||3 Cup (48 tbs)|
|Fresh mint leaves||4|
1) In a non-aluminum saucepan, combine together the lemon juice, pineapple and cornstarch. Stir well till the cornstarch has dissolved.
2) Bring the contents to a boil, reduce the heat and cook, constantly stirring, till the mixture is thick.
3) Take the mixture off the heat and add the crÃ¨me de menthe.
4) Into 6 individual dessert dishes, spoon ½ cup of ice milk and top each serving with 2 tablespoons of pineapple mixture. Use fresh mint leaves to garnish and serve right away.
