Pineapple Mint Julep Sundaes
|Unsweetened pineapple juice||3⁄4 Cup (12 tbs)|
|Canned crushed pineapple in juice||8 Ounce, drained (1 Can)|
|Minced fresh mint||1 Tablespoon|
|Frozen non fat vanilla yogurt||3 Cup (48 tbs)|
Combine pineapple juice and cornstarch in a small saucepan, stirring until smooth.
Stir in bourbon, and cook over medium heat, stirring constantly, until mixture is thickened.
Stir in crushed pineapple and minced mint; cook until thoroughly heated.
Scoop 1/2 cup frozen yogurt into each dessert dish; top evenly with pineapple mixture.
Garnish with fresh mint sprigs, if desired.
