Cottage Sundaes

Ingredients
  Cherries 3⁄4 Pound, pitted
  Sugar 50 Milliliter (1/4 Cups)
  Water 50 Milliliter (1/4 Cup)
  Lemon rind 15 Milliliter, grated (1 Tablespoon)
  Cornstarch 1 Teaspoon
  Cold water 30 Milliliter (2 Tablespoon)
  Cottage cheese 625 Milliliter (2.5 Cups)
  Whipped topping 1 Tablespoon (For Topping)
  Maraschino cherries 1 Tablespoon (For Decoration)
Directions

Place cherries, sugar, 1/4 cup (50 ml) water and lemon rind in saucepan.
Cover and cook 2 to 3 minutes over medium heat, stirring occasionally.
Mix cornstarch with 2 tbsp (30 ml) water; stir into cherry sauce and continue cooking 1 minute.
Remove pan from heat and let cool.
To build sundaes, alternate cherry sauce and cottage cheese in tall dessert glasses.
Top with whipped cream and decorate with maraschino cherries if desired.
