Tropical Sundaes

Ingredients
  Mashed ripe banana 3 Tablespoon
  Lemon juice 1 1⁄2 Teaspoon
  Orange marmalade 1⁄2 Cup (8 tbs)
  Pineapple apricot preserves 1⁄2 Cup (8 tbs)
  Rum 1 Teaspoon
  Vanilla ice cream 1 Tablespoon
  Flaked coconut 1⁄2 Cup (8 tbs) (Toasted)
Directions

Combine banana and lemon juice; add marmalade and preserves.
Cook 5 minutes over low heat, stirring constantly.
Remove from heat; stir in rum flavoring.
Makes about 1 1/3 cups.
Spoon warm sauce over ice cream.
Top with the toasted coconut.
