Cucumber In Brown Sugar

Cucumber In Brown Sugar has a unique taste. The dark soy sauce and port wine gived the flawless taste.
  Smoked streaky bacon 2 Ounce, cut into strips
  Shallots 2 , chopped
  Peeled cubed cucumber 1 3⁄4 Pound
  Butter 1⁄4 Cup (4 tbs)
  Salt To Taste
  Pepper To Taste
  Cornstarch 1 Teaspoon (Corn Flour)
  Dijon mustard 2 Tablespoon
  Soft dark brown sugar 2 Tablespoon
  Dark soy sauce 1 Teaspoon
  White port wine 2 Tablespoon

Put the bacon and shallots in a casserole.
Microwave, uncovered, on HIGH for 2 minutes.
Add the cucumber to the casserole with the butter.
Season lightly with salt and pepper.
Cover and microwave on HIGH for 7 minutes.
Mix the cornstarch (cornflour) to a smooth paste in a small bowl with the mustard, brown sugar, soy sauce and port.
Drain the cucumber and put in a vegetable dish.
Add the cooking liquid from the cucumber to the mustard and brown sugar mixture and stir.
Microwave for 1 minute on HIGH, then whisk vigorously and pour over the cucumber.
