Cucumber In Brown Sugar
|Smoked streaky bacon||2 Ounce, cut into strips|
|Shallots||2 , chopped|
|Peeled cubed cucumber||1 3⁄4 Pound|
|Butter||1⁄4 Cup (4 tbs)|
|Cornstarch||1 Teaspoon (Corn Flour)|
|Dijon mustard||2 Tablespoon|
|Soft dark brown sugar||2 Tablespoon|
|Dark soy sauce||1 Teaspoon|
|White port wine||2 Tablespoon|
Put the bacon and shallots in a casserole.
Microwave, uncovered, on HIGH for 2 minutes.
Add the cucumber to the casserole with the butter.
Season lightly with salt and pepper.
Cover and microwave on HIGH for 7 minutes.
Mix the cornstarch (cornflour) to a smooth paste in a small bowl with the mustard, brown sugar, soy sauce and port.
Drain the cucumber and put in a vegetable dish.
Add the cooking liquid from the cucumber to the mustard and brown sugar mixture and stir.
Microwave for 1 minute on HIGH, then whisk vigorously and pour over the cucumber.
