Vegetable Succotash

Ingredients
  Water/Chicken broth / vegetable broth / wine 1⁄4 Cup (4 tbs)
  Onion 1 Medium, chopped
  Green bell pepper 1 , seeded and diced
  Potatoes 2 Medium, cooked, peeled and diced
  Lima beans 2 Cup (32 tbs) (fresh / frozen)
  Corn kernels 2 Cup (32 tbs) (fresh / frozen / canned)
  Chopped tomatoes 2 Cup (32 tbs) (fresh / low sodium canned)
  Paprika 1 Teaspoon
  Black pepper 1⁄4 Teaspoon
Directions

Heat water in a large, heavy pot over medium heat.
Add onion.
Cook and stir over medium heat for 5 minutes.
Add more liquid if necessary during this process.
Add green pepper.
Cook and stir for 5 more minutes, adding liquid if necessary.
Add the potatoes, lima beans, corn, tomatoes, paprika, and black pepper.
Simmer, covered, for 20 minutes.
