Stinking Bishop

Stinking Bishop is a vegetarian and soft washed-rind cheese that comes from Gloucestershire, England. It has a very smooth, creamy and semi-soft texture. Known as one of the smelliest cheeses, this cheese is rubbed and washed with an alcoholic drink name as perry, which is prepared by using this cheese, a local type of pear. Widely appreciated for the meaty flavor, this stinky cheese has about 48% of fat. Produced by Charles Martell for the first time, it takes about six to eight weeks for affinage. Stinking Bishop does not have so many variations. The color of this cheese ranges from beige to light yellow to simple pale white and from grey rind to light pale orange. It is usually molded into wheels of different sizes for example a 4.4 lb (2 kg) wheel of cheese will have 8 inch (20 cm) diameter and 1.5 inch (4 cm) depth.

History of Stinking Bishop Cheese

Stinking Bishop was introduced by Charles Martell and Son at Laurel Farm from Dymock, Gloucestershire in the year 1972. Laurel Farm from Dymock, Gloucestershire is a place situated in South West part of England. The cheese is mostly prepared by using milk of Gloucester cattle, which is a 68th Gloucester breed heifers. Apart from this, it is also mixed and pasteurized with Friesian cattle milk.

Stinking Bishop Cheese Trivia

  • The cheese gained popularity internationally after appearing in the Oscar-winning animated movie named Wallace & Gromit: The Curse of the Were-Rabbit in the year 2005. This smelly cheese was utilized to recover the main character from dead.
  • Charles Martell from the Laurel farm was the only cheese makers all across the world, who started making this cheese initially.
  • It is widely considered very similar to other popular cheese types known as Epoisses or a Vacherin Mont d’Or.
  • Made and sold by Charles Martell and Son at Laurel Farm from Dymock, this cheese is usually sold in a 500g whole circular cheese wheel placed in a wooden case.
