|Parmesan cheese/Mature cheddar / gruyere cheese||2 Ounce (50 Gram)|
|Oil||2 Cup (32 tbs) (For Deep Frying)|
Make the choux pastry as for Savoury profiteroles.
Finely grate the cheese and add to the mixture after incorporating the eggs.
Heat the oil to 190Â°C/375Â°F, or when a cube of day old bread turns golden within 1/2 minute.
Drop teaspoons of the mixture into the very hot oil and cook for 3 minutes or until well puffed up and golden brown.
Drain on absorbent paper and serve hot or cold as a cocktail savoury.
NOTE: These also make a good light snack if served with salad and sprinkled with more grated cheese.
