Larue's Yorkshire Pudding

  Eggs 2 , separated
  Flour 1⁄2 Cup (8 tbs)
  Salt 1⁄2 Teaspoon
  Baking powder 1 Teaspoon
  Milk 1⁄2 Cup (8 tbs)

Beat egg whites until stiff. Beat yolks until thick and creamy. Sift flour, salt, and baking powder; add to yolks with milk. Mix well. Fold whites lightly into batter. After removing roast beef from pan, measure about 1/4 cup drippings into a one-quart casserole or pan. Pour batter quickly into hot grease; return to oven and cook 20 to 25 minutes. Make gravy with drippings remaining in roasting pan. Serve pudding in squares. LaRue's family calls this "Mom's Special Yorkshire Pudding." She says it is not actually Yorkshire pudding because it has baking powder in it. That way it holds up for a long time. Her family prefers it to the actual dish.
