Lemony Bakewell Tart

Barry & Phoebe make a simple Bakewell tart, with a mild lemon zest kick.
Ingredients
  Tart shell 200 Gram
  Raspberry jam 1⁄4 Cup (4 tbs)
  Caster sugar 150 Gram
  Unsalted butter 150 Gram (at room temperature)
  Eggs 3 , beaten
  Ground almond 100 Gram
  Egg yolk 1
  Zest of lemon 1
  Flaked almond 100 Gram
  Icing sugar 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1. Preheat the oven to gas mark 5.

MAKING
2. Spread raspberry jam over the tart shell and set aside.
3. In a large bowl, cream together butter and caster sugar.
4. Stir in the ground almonds and eggs. Mix well.
5. Add in the egg yolk and lemon zest. Mix well and pour the mixture over the tart and spread evenly.
6. Bake the tart for 40 minutes.
7. After 20 minutes take out the tart and top with flaked almonds. Bake for rest 20 minutes.

SERVING
8. Sprinkle the icing sugar over the tart and serve.
