Shrimp Soup English Style
|Raw shrimps||50 Small|
|Dry white wine||1⁄2 Cup (8 tbs)|
|Carrot||1 , minced|
|Onion||1 , minced|
|White turnip||1 Small, peeled and minced|
|Celery stalk||1 , minced|
|Fish stock||4 Cup (64 tbs)|
|Salt||1 1⁄2 Teaspoon|
|Lemon||1⁄2 , juiced|
|Anchovy paste||1 Teaspoon|
|Croutons||1⁄2 Cup (8 tbs)|
1 Peel the raw shrimps and devein.
2 Wash the shrimps throughly and drain.
3 In a saucepan, put the shrimps.
4 Add wine, cover, and simmer for 5 minutes.
5 Through a strainer or food mill, press shrimps and liquid or whirl in a blender.
6 In a pan, melt butter and saute vegetables in it until tender.
7 Stir in fish stock and pureed shrimps.
8 Add in the next 3 ingredients.
9 Reheat slightly
10 Serve sprinkled with croutons.
