Easy English Muffins
|Prepared biscuit mix||1 1⁄2 Cup (24 tbs)|
|All purpose flour||1⁄2 Cup (8 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Yellow cornmeal||2 Teaspoon|
Mix together biscuit mix, flour, and milk until a stiff dough forms.
Turn onto a cloth covered board dusted, with biscuit mix.
Gendy roll in biscuit mix lo-coat; shape into a ball and knead 1 minute.
Roll 1/4 inch thick and cut with 3-1/2 inch round cutter dipped in biscuit mix.
Sprinkle 1 teaspoon commeal evenly over ungreased cookie tin.
Place circles of dough, 2 inches apart on cookie tin.
Sprinkle evenly with 1 teaspoon commeal.
Cover and let stand in warm place 15 minutes.
Heat ungreased griddle to 375 degrees.
Cook muffins until brown (4-5 minutes) on each side.
Cool on wire rack.
