|Green peas||1 Pound, dried|
|Water||2 1⁄2 Cup (40 tbs)|
Sort peas; rinse.
Bring peas, water, salt and pepper to a boil in saucepan; reduce heat.
Simmer for 1 hour or until mixture is texture of mush, stirring occasionally.
Spoon mixture into blender or food processor container.
Process until pureed.
Combine puree and butter in saucepan.
Cook just until heated through, stirring occasionally.
May add additional liquid if mixture is too thick.
Spoon into 6 greased custard cups.
Place in baking pan filled halfway with boiling water.
Bake, covered, at 350 degrees for 1 hour.
Invert onto serving plate.
Serve with ham, pork or as a side dish.
