New England Apple Pie

Ingredients
  Double crust pie pastry 1
  Cream 1⁄4 Cup (4 tbs) (To Brush Crust)
  Cinnamon 1 Tablespoon
  Sugar 1 Tablespoon
  Flour 2 1⁄4 Tablespoon
  Ground cinnamon 1⁄4 Teaspoon
  Ground cardamom 1⁄4 Teaspoon
  Sugar 3⁄4 Cup (12 tbs)
  Pared tart apples 3 Pound, sliced (9 Cups, Choose Firm Variety)
  Butter/Margarine 2 Tablespoon
Directions

In a large bowl, mix together flour, cinnamon, cardamom and sugar. Add apples and toss until mixed.
Line pie plate with bottom crust. Pile apples into plate and dot with butter or margarine.
Cover with top crust and seal edges. Brush top with cream. Sprinkle with cinnamon and sugar. Make several slashes or decorative cut-outs in top crust with a sharp knife to allow steam to escape.
Bake at 425° F. for 10 to 15 minutes or until top is lightly browned. Reduce heat to 350° F. and bake another 30 to 45 minutes. Test to make sure apples are soft by inserting a knife through one of the slashes in the top crust.
