Boiled Beef English
|Beef chuck/Round of beef||3 Pound|
|Salt||1 1⁄2 Teaspoon|
|Boiling water||2 1⁄2 Cup (40 tbs)|
|Carrot||1 , sliced|
|Onion||1 , sliced|
1. Wipe the beef with a clean, damp cloth. Rub the salt into it and brown quickly in a hot kettle, adding 1 teaspoon of melted fat if the meat has none of its own. Sear the meat on all sides.
2. Add boiling water, carrot, onion and bay leaf. Cover and simmer 3 hours. Taste broth and add more salt if needed.
3. This meat may be served plain with Horseradish Sauce or with gravy made from the liquid in the kettle.
To make the gravy, skim off as much fat as possible.
Measure the liquid in the kettle.
For 1 cup, blend 1 1/2 tablespoons flour with 1 tablespoon of fat and add to the liquid.
Simmer and stir 3 minutes.
Taste, add salt if needed.
