Buttermilk Bran Muffins
|Packed brown sugar||1⁄2 Cup (8 tbs)|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Buttermilk||3⁄4 Cup (12 tbs)|
|Whole wheat flour||1 Cup (16 tbs)|
|Baking powder||2 Teaspoon|
|Baking soda||1⁄2 Teaspoon|
|Fiber one cereal||1 1⁄4 Cup (20 tbs), crushed|
|Raisins||1⁄2 Cup (8 tbs)|
Heat oven to 400°.
Line 12 medium muffin cups, 2 1/2 x 1 1/4 inches, with paper baking cups.
Mix brown sugar, oil and egg in medium bowl; stir in buttermilk.
Stir in remaining ingredients except cereal and raisins just until moistened; fold in cereal and raisins.
Divide batter evenly among muffin cups.
Bake 18 to 23 minutes or until golden brown.
Immediately remove from pan; serve warm.
