Quick Yorkshire Pudding
|All purpose flour||1 Cup (16 tbs)|
|Milk||1 Cup (16 tbs)|
|Clear pan drippings||1⁄4 Cup (4 tbs) (from roasted standing rib roast)|
Combine first 4 ingredients in a medium mixing bowl; beat at low speed of an electric mixer until smooth.
Spoon 1 teaspoon pan drippings into each muffin pan; tilt to coat evenly.
Spoon batter into pans, filling half full.
Bake at 425° for 15 minutes.
Reduce heat to 350°, and bake an additional 18 to 20 minutes or until golden.
