English Yorkshire Pudding
|Fat||1 Cup (16 tbs) (from roast beef)|
Put the flour and good pinch of salt into a basin, make a well in the center and break in the eggs.
Stir gradually, mixing in the flour from the sides and add milk by degrees until a smooth batter is formed.
Beat well for 10 minutes and then add remainder of milk.
Allow to stand for at least 1 hour.
Put the fat in heated baking dish.
Pour in batter and cook at 450° for 40-45 minutes.
Cut in 2x4-inch pieces and serve with a prime rib roast.
