English Toffee Cookies
|Sugar||1 Cup (16 tbs)|
|Egg||1 , separated|
|Regular all purpose flour||2 Cup (32 tbs)|
|Pecans/Walnuts||1 Cup (16 tbs), chopped|
Cream the butter or margarine and sugar together until smooth.
Add the egg yolk, and mix in thoroughly.
Sift the flour, measure, and sift again with the cinnamon.
Add flour to the creamed mixture, using your hands to blend together lightly but thoroughly.
Spread in an even layer over the entire surface of a greased cooky sheet (10 by 15 inches).
Work with your palms to smooth the surface.
Beat the egg white slightly; spread on top to completely cover.
Sprinkle the chopped nuts over all, pressing them into the dough.
Bake in a 275° oven for 1 hour.
Cut in 1 1/2-inch squares while still hot.
