Wild Duck With Orange Stuffing
|Stale bread cubes||3 Cup (48 tbs) (Toasted)|
|Grated orange rind||2 Teaspoon|
|Orange pulp||2⁄3 Cup (10.67 tbs)|
|Celery||2 Cup (32 tbs), diced|
|Melted butter||1⁄4 Cup (4 tbs), melted|
|Egg||1 , beaten|
|Poultry seasoning||1⁄4 Teaspoon|
|Melted fat/Salad oil||1⁄2 Cup (8 tbs)|
Soften bread in 1/2 cuphotwater for 15 minutes.
Add remaining ingredients except duck and oil; combine lightly.
Roast, uncovered, at 325 to 350 degrees for 25 to 30 minutes per pound or for 2 to 3 hours.
Baste occasionally with mixture of fat and 1 cup hot water, if desired.
