Ingredients
  Stale bread cubes 3 Cup (48 tbs) (Toasted)
  Grated orange rind 2 Teaspoon
  Orange pulp 2⁄3 Cup (10.67 tbs)
  Celery 2 Cup (32 tbs), diced
  Melted butter 1⁄4 Cup (4 tbs), melted
  Egg 1 , beaten
  Salt 1⁄2 Teaspoon
  Pepper 1 Dash
  Poultry seasoning 1⁄4 Teaspoon
  Duck 5 Pound
  Melted fat/Salad oil 1⁄2 Cup (8 tbs)
Directions

Soften bread in 1/2 cuphotwater for 15 minutes.
Add remaining ingredients except duck and oil; combine lightly.
Stuff duck.
Roast, uncovered, at 325 to 350 degrees for 25 to 30 minutes per pound or for 2 to 3 hours.
Baste occasionally with mixture of fat and 1 cup hot water, if desired.
