Stuffing For Game Hens
|Corn bread crumbs||2 Cup (32 tbs)|
|Soft bread cube||4 Cup (64 tbs)|
|Dried sage||1 1⁄2 Teaspoon|
|Canned frozen oysters||10 Ounce|
|Instant minced onion||1 Tablespoon|
|Butter/Margarine||1⁄4 Cup (4 tbs)|
|Cornish game hen||1 1⁄2 Pound|
Toss together corn bread crumbs, bread cubes, sage, salt, and pepper.
Drain oysters, reserving liquid.
Add onion to liquid.
Chop oysters; add oysters, onion mixture, and 14 cup melted butter to corn bread mixture.
Toss to mix well.
Salt insides of birds; truss each.
Place, breast side up, in 13x9x2-inch baking pan.
Rub with salad oil.
Spoon stuffing around hens.
Roast, loosely covered, at 400Â° for 1 hour.
Uncover; roast 30 minutes longer, basting birds with melted butter or margarine.
To serve, arrange the roasted Cornish game hens on a large serving platter; spoon the oyster stuffing in center.
