Ingredients
  Butter 1⁄3 Cup (5.33 tbs)
  Finely chopped onions 3⁄4 Cup (12 tbs)
  Apples 3 Cup (48 tbs), cored and chopped
  Raisins 1⁄2 Cup (8 tbs) (Seedless Are Best)
  Finely chopped parsley 2 Tablespoon
  Salt 1 Teaspoon
  Ground pepper 1⁄4 Teaspoon
  Ground cinnamon 1⁄8 Teaspoon
  Crushed dried sage 1⁄2 Teaspoon
  Crushed dried thyme 1⁄4 Teaspoon
  Crushed dried basil 1⁄4 Teaspoon
  Soft stale bread crumbs 5 Cup (80 tbs)
  Brown sugar 3 Tablespoon
Directions

Melt the butter in a large frying pan.
Saute the onions over low heat about 5 minutes or until barely transparent.
Add the apples, raisins, and seasonings.
Continue cooking over moderate heat 5 minutes.
Pour this savoury mixture over the bread crumbs and brown sugar.
Toss well.
Divide the stuffing roughly, 1/3 for the neck cavity and for the body.
Pack in lightly and skewer shut.
This is plenty of stuffing for a 7 to 8-lb goose.
For a larger goose, increase the bread to 7 cups, the butter to 1/2 cup, the onions to 1 cup, and the salt to 1 1/2 tsp.
