Stuffing For Crawfish Heads
|Crawfish tails||3 Pound|
|Seasoned bread crumbs||2 Cup (32 tbs)|
|Bell pepper||1 Large, cleaned|
|Green onions||1 Cup (16 tbs), chopped|
|Parsley||1⁄2 Cup (8 tbs), chopped|
|Evaporated milk||1 Cup (16 tbs) (Pet)|
|Red cayenne pepper||1 Tablespoon|
Clean about 150 heads and boil in a large pot with two tablespoons baking soda.
Grind crawfish tails, onions, celery, and bell pepper.
In a large bowl mix with remaining ingredients and push stuffing into heads.
Roll the stuffed part in flour and fry just enough to set stuffing.
