Golden Roast Turkey with Oyster Stuffing

  Chopped onion 3⁄4 Cup (12 tbs)
  Diced celery 1 Cup (16 tbs)
  Butter/Margarine 3⁄4 Cup (12 tbs)
  Poultry seasoning 1 1⁄2 Teaspoon
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Oysters 1 Pint
  Coarse bread crumbs 7 1⁄2 Cup (120 tbs) (Day Old)
  Chopped parsley 1⁄2 Cup (8 tbs)
  Turkey 10 Pound (1 Whole)
  Onion 1 Small
  Celery stalk 1
  Peppercorns 3
  Whole cloves 3
  Bay leaf 1
  Cornstarch 1 Tablespoon
  Melted butter/Margarine 1 Tablespoon

1) In a saucepan, sauté onion and celery in butter and cook until tender
2) Clean up the oysters and chop
3) Add poultry seasoning, salt and pepper and toss the mixture with bread crumbs, oysters and parsley
4) Clean the turkey by removing giblets and neck
5) In a saucepan, place the turkey, small onion, celery stalk, peppercorns, cloves, bay leaf and remaining salt, cover with water and keep it closed
6) Cook this mixture for about 15 minutes and remove liver
7) Continue to cook for another hour and 15 minutes until the giblets are tender
8) Reserve the broth by draining it
9) In a saucepan add the strained broth and bring it to boil
10) To thicken the broth, add a little cornstarch mixed with water
11) Chop the giblets and add it to the mixture
12) Take the oyster mixture and stuff turkey using the same
13) Roast the turkey by constantly basting it with melted butter

14) Serve hot after garnishing with Brussels sprouts, carrots and cashew nuts
