Holiday Rice Stuffing

Ingredients
  Carrot 1 Cup (16 tbs), grated
  Green onion 1⁄2 Cup (8 tbs), chopped
  Parsley 1⁄2 Cup (8 tbs), chopped
  Butter 2 Tablespoon, melted
  Long grain rice 1 Cup (16 tbs)
  Chicken broth 3 Cup (48 tbs)
Directions

In saucepan cook and stir carrot, onion, and parsley in butter for 10 minutes.
Stir in rice; add chicken broth, 1/2 teaspoon salt, and dash pepper.
Simmer, covered, 20 minutes or till rice is done.
Use to stuff two 2 1/2 to 3 pound roasting chickens.
