This simple and easy to prepare stuffing can be used as a poultry meat or red meat stuffing. Made with breadcrumbs and egg along with nuts, the carrot stuffing is spiced with nutmeg and ginger and full of flavor.
|Sifted flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
|Wheat germ||1⁄2 Cup (8 tbs)|
|Dry bread crumbs||1 Cup (16 tbs), lightly browned in a little butter|
|Pecans||1⁄2 Cup (8 tbs), chopped|
|Butter||1⁄4 Cup (4 tbs)|
|Brown sugar||1⁄2 Cup (8 tbs)|
|Carrots||1 Cup (16 tbs), finely shredded|
|Parsley||3 Tablespoon, finely chopped|
Sift flour with baking powder, salt, and spices; stir in wheat germ, then crumbs and nuts.
Cream butter with brown sugar; add egg; mix well; add carrots and parsley.
Lightly stir in sifted dry ingredients.
