Royal Strawberry Acid
|Ripe strawberries||3 Pint|
|Citric acid||3 Tablespoon|
|Cold water||3 Cup (48 tbs)|
|White sugar||3 3⁄4 Cup (60 tbs)|
Slice the berries into a large bowl, add the citric acid and water, cover lightly, and leave 24 hours.
Bring to the boil in a saucepan, add the sugar, eturn to the boil, and boil 3 minutes.
Strain into hot sterilized sealers or bottles.
Yield: about 1 quart.
To serve, pour 3 oz into a large glass, add 3-4 ice cubes, and fill up with about 8 oz cold water or soda water.
Add a perfect unhulled berry to each glass.
