Double Strawberry Delight
|Fresh strawberries||4 Cup (64 tbs), hulled (Divided)|
|Low sugar strawberry spread||1⁄2 Cup (8 tbs)|
|Unsweetened orange juice||2 Tablespoon|
|Grated orange rind||1 Tablespoon|
|Sliced natural almonds||2 Tablespoon, roasted|
Place 1 cup strawberries in container of an electric blender; top with cover, and process until smooth.
Combine puree and strawberry spread in a 1-quarr baking dish.
Microwave, uncovered, atr HIGH for 2 to 3 minutes or until mixture begins to boil.
Combine cornstarch and orange juice, stirring until smooh.
Stir orange juice mixture into strawberry mixture.
Microwave, uncovered, at HIGH for 2 minutes or until thickened; stir in orange rind.
Cover and chill.
Place remaining 3 cups strawberries in a large bowl.
Pour strawberry sauce over berries, tossing gently.
To serve, spoon mixture evenly into individual dessert dishes.
