Peaches spoil very easily even when under ripe. It is therefore best to buy only the quantity needed and consume as soon as possible.
Choose fragrant peaches that are unblemished and not too hard. Avoid those with green colouring, as they were probably picked too early and won't ripen properly, they'll also be less sweet than peaches harvested when ripe, since the sugar content does not increase after picking. Handle peaches with care, as they spoil rapidly once bruised. To prevent spoiling and causing other peaches to rot don't pack peaches too closely together. Unripe peaches can be left to ripen at room temperature. Peaches will keep for only 3 to 4 days at room temperature and slightly longer in the fridge.
